1 gluten free pie shell 2 tbsp olive oil 1 onion finely chopped 2 cloves garlic crushed 2 cups chopped broccoli 1 ½ cups grated vegan cheese 4 eggs well beaten (egg substitute for vegan) 1 ½ cups almond milk salt & pepper
Preheat oven to 350 degrees F. In frying pan, heat up oil. Add onion, garlic, & broccoli. Cook until veggies soften. Spoon vegetables into pie shell and sprinkle with "cheese". Combine eggs and almond milk. Season with salt & pepper. Pour egg mixture over vegetables and cheese. Bake for 30 minutes.
