¾ cup cooked quinoa ½ of a red onion 1 cup chopped mushrooms 1, 15 oz can black beans 1 cup grated raw beets ½ cup raw crushed walnuts 1 tbs cumin ½ tbs chili powder pinch of salt & pepper
Saute & season onion & mushrooms. Remove from heat, mash together with beans. Mix in quinoa, beets, walnuts, and spices. Chill for 20 min. Form 8-9 patties, bake for 30 min at 375 degrees F. Serve on gluten free patty. Top with spring mix greens, red onion, tomato & avocado.
