Delicious Stuffed Peppers!


1 cup cooked brown rice 2 red peppers 1 cup raw cashews ½ chopped onion ½ cup cooked black beans ½ lemon 1 tsp chili powder 4 tbsp olive oil salt & pepper to taste


Soak cashews in water for 1 hour. completely submerge nuts. Preheat oven to 425 degrees F.  Saute onion in olive oil until translucent. Add cooked rice, beans, salt, pepper, & chili powder, saute 5 more minutes. Drain and rinse cashews. Blend cashews with pinch of salt and lemon juice until creamy. Cut open peppers, fill with rice & bean mixture. Top with cashew cream. Bake for 30 minutes.
